Chicken & Spring Mix salad

4 oz chicken breast

1/2 cup cherry tomatoes

1/4 cup white beans

2 cup spring mix

3 tsp extra virgin olive oil

1 tsp balsamic vinegar


  1. Heat skillet on medium heat and add 2 tbsp olive oil.
  2. Add chicken; cook 6 - 10 minutes on each side or until juices run clear.
  3. Slice chicken and set aside.
  4. Meanwhile toss spring mix, white beans, and tomatoes.
  5. Add chicken and toss with oil and vinegar
